Red Giant (Aka taka-na) is a Japanese mustard green specifically grown for its wide, crepe-like purple leaves and exotic, spicy mustard flavor. Though, it can be harvested as a microgreen, baby leaf, or at maturity. Like many fruits and vegetables sharing deep red hues, Red Giant boasts compounds and antioxidants known to help protect against free radicals. Its baby leaves are very popular in mixed green salads, stir-fried, or pickled in traditional Japanese cuisine.
