A delicious and prolific, dark green scallop squash. Full Eclipse F1 is great to eat as a baby scallop. Our favorite way of eating these beauties is roasted in the oven either whole or sliced, with a bit of butter and seasoning. It would do well as a side dish, and everyone will love them.
