How to Grow Dark Green Yard Long Beans
Germinate seeds on a moist paper towel before planting. Dark Green Bean seeds are direct sown in soil of at least 60℉ where there is no risk of frost. Grow in a warm, sunny spot. Sow indoors 2-3 weeks before outdoor planting for an earlier harvest. Be sure to harden off well if indoor sowing. Young seedlings do not tolerate shock. If you live in a warm climate plant seeds every 3-4 weeks for multiple harvests. Keep soil moist in the early days. It is best to train the vines to climb strings or supports as they grow. Yard Long Beans are generally low maintenance.
Harvesting Dark Green Yard Long Beans
Harvest when pods are pencil thin, smooth, tender, and 18-20" long. Pods, seeds, stems, and leaves are all edible!
Culinary Tips
Pods can be deep-fried, stir-fried, steamed, or used in soups. Their thin size makes them cook quite rapidly. Traditionally used in Szechuan recipes, prepare the pods by cutting them into 2" sections. Steam the leaves and stems, then toss with an olive oil dressing for a nutritious side.
